I know they're expensive, but I like to take the leftover ham or turkey carcass from a big meal and put the entire thing in one of those 2 or 2 1/2 gallon zipper-lock bags. The bags are expensive, but you can wash them out if you like.
By the way, the ones with little sliders on them usually don't seal so well as the ones without. And, yeah, some of the non-slider store brand ones leave something to be desired too. :(
