John: I've never made kimchi, so I don't have any particular suggestions. I'm almost sure I have some recipes, but I'm guessing you already have plenty of those. It's funny you should ask, because I'm about to make some sauerkraut for the first time.
In general, my favorite fermented foods guide is Sandor Katz's Wild Fermentation. He's out there: he'll ferment goat meat and hauls from dumpster diving expeditions. But I like his book, and I respect the multiple goals he's trying to fulfill. I can't find my copy ATM, but I'm sure there's a kimchi recipe in there somewhere. I can try harder later to find the book or come up with some other recipes, so lemme know if that's what you need.
