I think I'm going to call these footboules:
It's kind of hard to tell from the pictures what the shape of these really is, but football or foot-boule comes as close as anything else. BTW, these were bread flour with small amounts of bean flour (1 Tb.) and wheat germ (3 Tb.). Awfully dark again. I think my oven may be dying. Yay.
I had problems with the most recent loaf. I started it on Thursday around 9PM. Yesterday morning, it was moving very slowly. I let it sit until about 8:00 last night, and finally decided to punch it down. I let it sit overnight, and it looked much better this morning. It's in its final rise now, but I think, Joe, that your suggestion to punch it down at some point is a good one. Most bread recipes call for that anyway, so I'm not sure why this recipe doesn't call for it.
Anyway, it's looking pretty now. I should have great bread, baked in The Christmas Miracle (tm Joe), this afternoon.
