If you have any interest at all in food beyond eating, please read On Food and Cooking by Harold McGee. It's the second edition of an unparalleled compendium of information about food -- what's in it, where does it come from, why does it do what it does, and a lot more. This is not a collection of recipes, nor a dry book of tables (though tables abound). Anyway, check it out. It's why I haven't posted lately. ;)
Hmmm bring it with you next time you visit, and that way I can read it, ok? ;)

Well, if you want me to stay a month while you read it....;) This is not something you can toss off in a weekend.
